Botanicals include: Hand-zested limes from Temecula, fresh mint handpicked from Santa Cruz, almonds harvested from the Capay Valley, wild foraged juniper berries from Big Sur, Fir from a tree farm in Sonoma Valley and Kombu sea kelp wild harvested from the Mendocino Coast.

Tasting note:
Strong citrus on the nose, with bright lemony notes, hints of mint and evergreen pine.
Palate kicks off with savoury, herbal notes and a faint nuttiness with gentle echoes of mint on the entry, and lovely Pine-forward juniper. It is slightly sweet, and the complimenting botanicals add a unique texture and richness to the palate. This develops into hints of lime and more citrus, and the herbaceous pine segue into a minty, slightly tingly sensation in the back of the palate.
Finish is gentle and warm with very little burn, which is impressive for it's 43%. Perfect gin for a G&T and exceptional choice for a top quality martini.
