Brandy and Cognac are made by distilling wine into something richer and more concentrated, with flavours of dried fruit, caramel and warm spice that develop further as the spirit ages in oak. Cognac is the best known style, produced in a specific region of France under strict rules, while brandy covers a wider range of grape and fruit-based spirits from New Zealand and around the world. Both are traditionally sipped neat or over ice after a meal, though they also work well in classic cocktails or splashed into coffee on a cold night.
