James Pimm opened his first oyster bar in 1823 and within 10 years, was running a chain of five restaurants frequented by city gentlemen from the Bank of England, Lloyds of London and the Stock Exchange. Pimm devised the famous gin-based cocktail to accompany the shellfish and the recipe was kept a closely guarded secret. To this day only six people in the company know the recipe.

Tasting note
Very aromatic, with big notes of juniper, citrus and berries, becomes bitter with woody notes, followed by a long bittersweet finish.
