Clarity Distilling Company was founded in Tauranga by George White and Stephanie Downer, two friends with backgrounds in accounting and law rather than distilling, who set out to make gin as transparently as possible. The name reflects that approach, since every ingredient and process is explained openly. Rather than the usual grain or molasses spirit, Clarity's base is ethanol distilled from whey, a byproduct of New Zealand's dairy industry, giving the gin a clean starting point.

Each botanical is distilled separately rather than all together, since ingredients like juniper, citrus and florals behave differently under heat. The results are then blended back together once every distillate has been perfected. It is a slower, more hands-on way of making gin, and it shows in a range running from a classic dry style to a navy-strength expression. For more from the local scene, our New Zealand gin range is worth a look.
