Laying claim to the highest modern distillery in the world, La Estacada sits at 7,200 feet above sea level. It is here that the Herrara family produce their exquisit sipping tequila Tierra Noble. La Estacada is located just outside the equisite town of Mazamitla in Jaliso Mexico.
Two unique aspects of Tierra Noble which make it the perfect tequila are at these high altitudes, the air is cool and crisp which causes a much slower fermentation resulting in a musto with well developed flavours (using exclusively Montpelier wine yeast) and a secondary fermentation, usually only scene in chardonnay production, which produces beautiful buttery notes in the final product.
To craft this extravagant tequila, the master distiller selects a range of the most unique Reposados to bring the Tierra Noble Cristalino to life after a further distillation, which removes the golden barrel aged colour and produces a smoother, more decadent final product. Despite the loss of colour, the flavours and aromas that are acquired while aged in the casks are not lost after the spirits are then distilled again to create this clear, smooth and perfect Cristalino Tequila.
Tasting Note
The nose is very pleasant and soft, with a range of aromas ranging from fruit, sweet and citrus orange and grapefruit with notes of cooked agave honey, light vanilla and cocoa in a perfect balance of wood without exaggerating its presence.
To taste, all the notes from the nose are confirmed in the mouth; soft product to the palate, balanced and fresh, with a light cocoa flavour, fresh and sweet fruits, peach and red fruits; of great persistence on the palate.
