Laying claim to the highest modern distillery in the world, La Estacada sits at 7,200 feet above sea level. It is here that the Herrara family produce their exquisit sipping tequila Tierra Noble. La Estacada is located just outside the equisite town of Mazamitla in Jaliso Mexico.
Two unique aspects of Tierra Noble which make it the perfect tequila are at these high altitudes, the air is cool and crisp which causes a much slower fermentation resulting in a musto with well developed flavours (using exclusively Montpelier wine yeast) and a secondary fermentation, usually only scene in chardonnay production, which produces beautiful buttery notes in the final product.
To craft this ultra-premium Cristilano Tequila, the master distillers taste Reposados and Añejos conscientiously until the perfect casks are found to make the greatest and most unique final product. Once selected, these Añejos and Reposados will leave the casks in which they reached character and maturity in order to be distilled for a third time and in doing so, polish the notes and tastes in the most whimsical way, taking care of their identity in every detail.
This is as good as tequila gets.
Tasting Note
On sight, it is very clean with light streaks around the edges and in backlight. Remarkable body is shown in its adherence to the glass, with very long legs forming.
The nose has strong character to it, with sweet fruits and notes of green apple, a discreet presence of cooked agave and light hints of chocolate.
To taste, incredible balance with citrus notes, spices, clove, fruity notes and a vanilla butter finish. It is silky-smooth, with long, fresh staying power on the palate, and a moreish woody aftertaste.
