Four Pillars Rare Dry Gin is crafted to deliver the best of all worlds: a perfect, classic gin and also something that would fascinate and delight even the most hardened gin fanatic. It’s spicy but with great citrus, a truly modern Australian gin.
This gin captures the essence of contemporary Australia’s heritage in Europe and Asia. Four Pillars use whole oranges, which is not typical - but Australian citrus is highly aromatic and this helps support the spicier botanicals like cardamom. The cinnamon and star anise add rich fruitcake tones, the Tasmanian pepper berry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.
Four Pillars Gin is made in Australia’s Yarra Valley. Everything the distillers make is based around their four pillars - the still, the water, the botanicals and love.
Pillar 1 - The Four Pillars copper-pot, which is called Wilma.
Pillar 2 - The water they use from Yarra Valley is triple filtered.
Pillar 3 - They use local, exotic and traditional botanicals, as well as whole oranges, which gives Four Pillars Gin its flavour profile.
Pillar 4 - The distillers love what they do and love what they’ve made. It all adds up to a vibrant, quality Australian gin which stands out in cocktails, and is exceptional neat.
Tasting note
The juniper is light and sweet on the nose, supported by touches of chopped mint, fresh citrus and floral hints. The palate opens with candied peels and angelica, with warm cinnamon and white pepper building to a spicy mid palate. Subtle fruity notes throughout. Suitably drying on the finish, with lasting notes of liquorice and lemon zest.
