Last Light Solera Aged Rum is a polished, premium New Zealand rum that shows just how much character the solera method can bring to the glass. Made by Last Light Rum in Auckland, this expression uses a fractional blending system more often associated with sherry and fortified wines, helping build a profile that feels layered, rounded and beautifully composed. It is a very smart sipping rum, but it also has enough versatility to shine in a premium Rum Old Fashioned or a very luxurious Rum and Ginger.
This excellent solera-aged rum is matured in a mix of American and French oak barrels, including casks that previously held New Zealand wine, which helps give it extra texture and depth. The palate is soft and generous, with bright apple and pear drop on the nose, then candied sugar, soft liquorice, cinnamon and nutmeg unfolding over integrated oak and a touch of vanilla. Compared with the cask strength version, this one is a little more rounded and accessible, while still delivering plenty of richness and a long spicy finish.
Tasting Notes
Bright and layered with apple, pear drop, honey and maple syrup on the nose, followed by candied sugar, soft liquorice, cinnamon, nutmeg, gentle oak and a lingering spicy vanilla finish.
