Vinted from a blend of 60% merlot, 26% cabernet sauvignon and 14% cabernet franc, this is a classic Hawke's Bay Bordeaux-style red. Merlot provides the wine's generous plum and blackberry fruit, cabernet sauvignon brings depth and structure, while cabernet franc contributes lifted aromatics and a subtle savoury edge. Produced from the outstanding 2024 Hawke's Bay vintage, it has all the hallmarks of a premium reserve release: concentrated dark fruit, impressive depth and a long, satisfying finish. The wine is matured for up to 18 months in seasoned French oak, adding depth and complexity while allowing the vibrant fruit character to shine. From the first sip you will see the quality here. It will be immediately apparent that this wine was not produced to sell under $25.
If you're looking for a top flight Hawke's Bay Red that overdelivers in every sense, Ultimatum will be the smartest purchase you'll make this year.

This is a serious Hawke's Bay red and is still in its youth. We recommend decanting before serving to allow the wine to fully open and show its full potential.

Sam Kim, Wine Orbit: "An impressive offering, the fragrant bouquet features black- and purple-fruit richness, tobacco, warm spice, pressed-flower, and fine oak aromas. The palate is concentrated and richly textured with excellent weight and depth, wonderfully framed by silky texture and layers of chalky tannins. It's bold and opulent, yet balanced and refined, with a sustained, satisfying finish. At its best: now to 2034."
The winery writes: "An enticing aroma of Black Doris Plum, and blackberry with five spice red liquorice, garigue, cedar cigar box and cocoa powder. The palate has a velvet texture, an attack of dark fruits dominated by Black Doris plum and blackberry. A rich full-flavoured mid-palate supported by firm, ripe tannins, for a long and sumptuous finish. The oak influence is subtle and provides spice notes of nutmeg, cardamom and structure."
