Crafted in Byron Bay, Papa Salt is an easy-drinking premium gin inspired by long afternoons, warm coastlines, and the relaxed spirit of the Australian east coast.
Initially created as a passion project between Margot Robbie and four close friends, Papa Salt was never meant to be just another celebrity gin. They wanted to create the gin they could drink all day in backyard, then all night around the kitchen. Something bright, coastal and beautifully balanced. Something premium, but not precious. Something refreshing enough for a long G&T in the sun, but complex enough to hold its own in a martini.
Getting there took five years, plenty of experimentation, and 59 recipe iterations before the final liquid was locked in. The result is a gin that feels distinctly Australian, built around native botanicals, soft citrus, gentle florals, savoury depth, and a subtle coastal minerality that gives it a clean, refreshing finish.
Papa Salt has already proven it is far more than a famous-name bottle. With a Platinum Award and Best Gin title at the L.A. Spirits Awards, followed by Gold at the San Francisco World Spirits Competition, this Byron Bay gin has earned serious recognition on the world stage.

Tasting note:
Papa Salt’s beautifully rounded flavour profile celebrates the subtle taste of native Australian botanicals. The gin opens with a bright, zesty lift of wax flower, hibiscus and citrus peel, before giving way to soft nutty notes of Australian wattleseed and a gentle warmth from pink peppercorn. A hint of oyster shell brings a distinctive coastal minerality, adding freshness, texture and a clean saline edge to the finish.
There is a lot going on here, but that is the magic of Papa Salt. It is layered, polished and quietly complex, while still being dangerously easy to drink.
