Starward Bourbon Cask #2 Single Malt Whisky is a limited-edition Australian single malt that shows a very different side of one of Melbourne’s most celebrated whisky producers. While Starward built its reputation on maturing whisky in Australian wine casks, Bourbon Cask #2 explores the path the distillery could have taken instead, with the spirit matured entirely in bourbon barrels for five “Melbourne years”. The result is bright, fruit-driven, and beautifully clean, with the casks acting as a more neutral canvas for Starward’s tropical new make character to shine through.
This distinctive 52% release opens with grilled pineapple and vanilla on the nose, followed by lemon curd, dried banana, and honey across the palate. Buttered toast and toasted oak carry through the long finish, giving it enough richness and structure to balance all that ripe fruit. As a limited release and something of a “sliding doors” moment in Starward’s story, it is a particularly interesting bottle for fans of the distillery, or for anyone who wants to taste Australian single malt stripped back from the red wine cask style Starward is best known for.
Tasting Notes
Bright and tropical with grilled pineapple, vanilla, lemon curd, dried banana, and honey, followed by buttered toast and toasted oak on a long, warming finish.
