Starward Solera
Starward hails from Melbourne and has garnered numerous accolades as a standout distillery since its opening. The Solera is a beloved favorite of Starward's founder and the brand's inaugural whisky release.
The traditional method used by the Spanish to age their Sherry and maintain consistency is known as Solera. This process involves blending a fractional amount of young cask with more mature spirit. As a result, each bottle produced today contains a touch of the first ever cask.
Using this as inspiration, Starward turned to Apera barrels, an Aussie fortified wine similar to Sherry, that have typically held spirit over decades, resulting in some seriously flavourful oak.
Every ingredient in Starward's Solera Whisky is sourced from within a day's drive away of the distillery. Starting with a grain like Australian malted barley made complete sense, and then fermenting that with brewers' yeast gave a bold, craft flavour that is what Starward is now so well known for. Finally, generous aging in the afore mentioned Apera oak barrels and voila the Starward Solera was born!
This all results in a stunning whisky that is rich and well balanced with notes of jammy fruits, creme brûlée and spice with a lingering dry finish.
Tasting note
Your nose is greeted by a blend of tropical and orchard fruits, along with notes of caramel and vanilla. The palate offers hints of toasted caramel and creme brûlée, as well as banana, figs, and sweet spice. The finish is juicy and full, with a touch of dry spice that lingers.
